Ingredients

  • thinly cut asparagus
  • Sliced red bell pepper
  • crushed clove garlic
  • rice vinegar
  • sesame oil
  • vegetable broth
  • beaten eggs
  • oil
  • crushed fresh ginger
  • sodium soy sauce
  • red pepper sauce for flavor

Preparation

Take a pan and mix the rice with the vegetable broth and bring it to boil on your cooking oven. Cover the lid and simmer the heat to cook till the broth gets absorbed in the rice. Now take a big plate and spread the rice to cool down.

As the rice is laid down to cool down, take another non stick pan and sprinkle little oil in it. Heat it and toss in the beaten eggs to cook it as fried scammed eggs for 1 minute. Put it aside in a small container. Again heat oil in the pan and add the asparagus, pepper, garlic, ginger and all other vegetables to it. Stir and cook for atleast 2 minutes. When the vegetables become tender and soft, mix the cooked rice, sauce, vinegar and the fried eggs together. Take it off the oven and serve hot with some yummy Chinese side dish.
